Nigella's Totally Chocolate Chocolate Chip Cookies

When you question everything around you, all you need are these cookies, just to reassure yourself that good things in life still exist. These are Nigella Lawson's famous totally chocolate chocolate chip cookies. But I did do a little tinkering, adding a spoon full of dulce de leche in the center just to make them a bit fudgier. Not that it needed anything else, but I just get a little greedy sometimes. *wink*

Ingredients:
125 gm dark chocolate
150 gm plain flour
30 gm cocoa powder (sieved)
1 tsp bicarbonate soda
1/2 tsp salt
125 gm soft unsalted butter
75 gm soft light brown sugar
50 gm white sugar
1 large egg (cold)
350 gm dark chocolate chips
100 gm dulce de leche (recipe in dulce de leche cannoli)

Directions:
1. Melt the 125 gm chocolate in the microwave oven.
2. Put the flour, cocoa, bicarbonate of soda and salt into a bowl.
3. Cream the butter and sugars in another bowl. Add the melted chocolate and mix together.
4. Beat in the cold egg, and then mix in the dry ingredients. Finally stir in the chocolate morsels or chips.
5. Scoop out equal sized mounds on a baking tray lined with a baking sheet. Create a crater in the middle to pour some of the dulce de leche in it.


Cover the top with some cookie dough to create a shape of a mound.


6. Bake them for roughly about 20 minutes in a 170°C/325°F oven. Once they are done, insert a skewer to check if it comes semi clean. It should not be wet with batter.
7.Leave to cool slightly on the baking sheet for 4-5 minutes, then transfer them to a cooling rack to harden as they cool.
