Dulce De Leche Cannoli

Some recipes are so close to your heart that words fall short. Enjoy a slightly different take on these traditional cannoli :)

Instructions:

Ingredients:


A packet of cannoli shells (Now, if you want to go through the elaborate process of making cannoli shells, be my guest. Not that they're impossible or too laborious, I just couldn't wait for long enough)


Filling:

200 gm Ricotta cheese

100 gm Cream cheese

100 gm Double cream

100 gm Dulce de leche


Dulce De leche:

1 (14 ounce) can sweetened condensed milk


Optional:

100 gm Dark chocolate morsels


Directions:

1. First thing's first, we need to make the dulce de leche, which is literally the easiest thing I've ever made in my entire life. Put the condensed milk into a 9 inch deep dish pie plate and cover tightly with foil. Set it on a roasting pan and add enough hot water to reach halfway up the pie plate. Bake it for 45 minutes in a 220 degrees C oven and check the water level in between and add additional if necessary. Bake till the milk is thick and brown. This batch should make about a cup full.


2. Melt the chocolate morsels in the microwave oven with some butter (You don't need to go heavy on them with double broilers and everything. I know washing up afterwards is tough). Dab the ends of the cannoli in the melted chocolate.


2. Now, beat the cream cheese and ricotta cheese together in a bowl until it's smooth. And whip the cream till soft peaks in a separate bowl. Fold the cheese mixture and whipped cream together. Add 2 spoons of the dulce de leche you just made and mix. You can add more than that, totally depends on your taste buds.


3. Now that you have everything ready, it's time to put the cheese mixture in the piping bag and fill up the empty shells. Adorn the sides with tiny chocolate morsels if you want but that's totally optional.
